Moist Butter Cake

In the past my butter cake has never been successful, so for today due to the request from my beloved niece, decided to give it another go using the recipe from : Mrs Ng SK Moist Butter Cake

And the result….. The cake finally turns out well! Yippee…. 

The recipe as below :

  1. 230gm salted butter softened
  2. 200gm eggs / 4 nos A size eggs
  3. 50gm + 150gm caster sugar
  4. 200gm self raising flour, shifted
  5. 60ml milk
  6. 1 vanilla pod – seed scraped or 1 tsp vanilla extract


Method :

  1. Preheat oven at 150c. Prepare 4 x medium size cake tray
  2. Separate egg between egg white and egg yolk
  3. Beat egg white until soft peak form. Add in 50gm sugar. Beat until stiff
  4. Cream butter and sugar until fluffy. Add vanilla and combine well
  5. Add egg yolk one by one beating well after each addition
  6. Put in half of flour and mix on low speed
  7. Add in milk in 2 portion and mix well after each mix
  8. Fold in balance of flour
  9. Add half of egg white and mix on low speed
  10. Fold in balance of egg white
  11. Bake for 50 to 60 mins or until skewer comes out clean
