Lemon Shortbread

Today due to popular demand, decided to bake lemon shortbread, one of the cookies that is a favourite among my friends. The lemony taste is a perfect blend with the richness of the shortbread.


  1. 250gm butter – here I use LaBelle (French butter) for the slight saltiness of the shortbread
  2. 150gm brown sugar
  3. 100gm cornflour
  4. 300gm medium protein flour
  5. 1 teaspoon of salt
  6. 1 teaspoon of lemon paste
  7. Juice and zest of 1 lemon (big size)


  1. Cream butter and brown sugar till light and fluffy
  2. Add in the lemon paste and mix well
  3. Add in the juice and zest of the lemon and mix well
  4. Fold in the salt + flour + cornflour till a soft dough is form
  5. Form the dough into little round balls
  6. Using a fork, gentle press the cooking to form the shape
  7. Bake in 180c for 15 – 20 minutes
  8. Remove from oven and cool before shoring in an airtight container
