Homemade Mushroom Soup

My family have always been a fan of mushroom soup. So today I decided to make my own mushroom soup instead of preparing the instant soup from the can or packet. And the result is pretty satisfying as the soups were all gone 😍

The recipe for a simple soup as below.

Ingredients:

  • 500gms of mushroom – chopped coarsely    
  • 300gms of oyster mushroom – chopped coarsely
  • 1 yellow onions – cut into smaller pieces  
  • 200gm butter  
  • 1 tablespoon of olive oil
  • 2 pieces of bay leaves
  • 250ml milk
  • 1.5 liter of chicken stock
  • Salt and pepper to taste

Method:

  1. In the pot, heat up the olive oil and butter together. By using olive oil will help to ensure that the melted butter does not burn
  2. Add in the onions and bay leave and stir fry till fragrant
  3. Add in the mushrooms (both mushroom) and fry for 2 minutes
  4. Add in half of the chicken stock 
  5. Once the soup is boiled, transfer to a blender and blend to desired texture – don’t blend too long as you may want some of the mushrooms to be visible
  6. Transfer the blended mushroom back into the pot and boil with remaining stock for another 5 mins stirring slowly
  7. Add the milk and bring to boil
  8. Reduce the fire and let the soup reduced to the desired texture while stirring it continuously 
  9. Dish and serve hot with garlic bread (garlic bread is optional)

  
Optional – Garlic bread

  1. Mix butter with chopped garlic 
  2. Season to taste – I added salt and garlic powder 
  3. Add Chopped parleys (optional) and combine the mixture well
  4. Spread the garlic butter onto cut bread / French loaf
  5. Toast for 5 minutes
  6. Served hot
