Coffee Crunch Cookies

For coffee lovers, one just got to have the right cookies to go with the aromatic cup of cappucino or latte. In most cases, we either served them with chocolate chips, butter cookies or most common one, biscotti. For me, cookie that is not too sweet with bits of coffee adding to the crunch in a cookie that simply melts in your mouth would be perfect!

So yes here goes the recipe of my Coffee Crunch Cookies that I finally perfected to suit my taste 😉 though some of you out there would most probably like it sweeter 😉

Ingredients :

  • 250gm butter – soften in room temperature
  • 180gm caster sugar – for sweeter taste, increase the sugar to 200gm 
  • 120gm corn flour
  • 290gm flour
  • 1 teaspoon coffee oil
  • 100gm coffee beans – grounded roughly (ensure that it is not too fine as you would want the coffee bean to be crunchy)


  • 1 tablespoon milk

Method :

  1. Cream butter and sugar till light and fluffy
  2. Add in the coffee oil and beat on low speed till mix well
  3. Fold in the flour and corn flour till well mix
  4. Fold in the coarsely grounded coffee beans and mix well
  5. Add in the milk and mix well
  6. Using nozzle no 10, fill up the piping bag and pipe the cookie to your desired size
  7. Bake in pre-heated oven at 180c for 15 to 18 mins till lightly brown
  8. Cool and store in air-tight container
