In my recent quest in living a healthier life, I started reading up a lot on nutrient and the benefits on ingredients such as Chia Seeds, Oats etc. This leads me to adapting a lactation cookies that a friend of mine got me to bake for her over a year ago into what I call a Dairy Free Healthy Cookies.
Dairy Free is define as “free from milk-based ingredients” which includes casein, whey, lactose and even milk fat. This also means that it does not uses butter instead replacing it with Olive Oil.
Olive Oil – rich in monounsaturated fatty acids which helps in lowering risks of heart disease, high blood pressure and stroke. It is also said that regular intake helps in reducing inflammation, endothelial dysfunction and carbohydrate metabolism. Chia Seeds – A popular Superfoods in the health community, Chia Seeds are easy to digest and is very versatile that can be add easily into recipes. These little seeds are nutrient dense while packs a punch of energy boosting power. Now it is said that the benefits of Chia Seeds are so much greater than we originally realized. This is because Chia Seeds are rich in fiber, omega-r fats, protein, vitamins and minerals. They also contain essential fatty acids alpha-linolenic and linoleic acid, mucin, strontium, Vitamins A, B, E, and D, and minerals which includes sulphur, iron, iodine, magnesium, manganese, niacin and thiamine. This is also adding to the fact that they are a rich source of anti-oxidants. Sesame Seeds – An excellent source of copper, manganese, calcium, phosphorus, magnesium, iron, zinc, molybdenum, vitamin B1 and dietary fiber. It is also said that the calcium in the sesame seeds helps in preventing colon cancer, osteoporosis, migraine and PMS symptoms. The recipe of the Dairy Free Healthy Cookies is able to yield about 100 pieces of bite-size cookies.
- 125 gm Olive Oil
- 2 AA size eggs – lightly beaten
- 90 gm brown sugar (Note : If you wish to have sweeter cookies, add another 20 gm sugar or replace the brown sugar with castor sugar)
- 150 gm Oats
- 100 gm almond nibs
- 100 gm roughly chopped dried cranberries
- 50 gm Chia Seeds
- 30 gm White Sesame Seeds
- 30 gm Black Sesame Seeds
- 80 gm seedless raisins
- 80 gm self-raising flour
- 1/2 teaspoon of salt
- In the mixing bowl, mix all the dried ingredients together including the dried cranberries and raisins
- In a large mixing bowl, mix the olive oil and eggs together
- Add in the mixed dried items
- Using a metal spoon, mix all the items together until well mixed
- Spoon 1/2 teaspoon of the ingredients onto the baking tray
- Bake in 180c for 15 – 18 minutes until cookies slightly brown
- Cool the cookies before storing in an air-tight cookies jar
The cookies will be a little soft in the center, hence making it a perfect snacks. A good snacks for those on the go. Even suitable for kids (my boys definitely loved these cookies).
