Brazilian Cheese Bread (Pao de Queijo)

Having introduced to Brazilian Cheese Bread sometime ago during a meet up over dinner with some friends, I actually added it to my ‘must try to make’ list. Finally able to get around making it today. Am very happy with the result and it is very satisfying to see my little ones helping themselves to the basket these little cheesy bread 😍

The recipe below yields about 24 (mini muffins cups)

Ingredients :

  • 1 room temperature egg
  • 80ml olive oil
  • 160ml milk
  • 170gm tapioca flour
  • 120gm cheddar cheese, grated
  • 50gm mozzarella cheese, grated
  • 1 teaspoon salt

Method :

  1. Grease the muffin pans
  2. Put all the ingredients into the blender and pulse until smooth
  3. Fill the muffin pans until 3/4 full
  4. Bake in pre-heated oven at 200c for about 15-20 minutes until puffy and lightly browned
  5. Cool and serve warm

Note : balance can be kept in air-tight container and heat up for 15 seconds before serving. Do not keep more than 24 hours
