Claypot Crab Rice

My family and I loved seafood a lot although I personally is not able to consume too much due to health reason while my picky eater has a mild allergy to crab (his lips will swell a little). However, that does not stop us from wanting to eat more crabs. After all, who could resist these delicious dishes?

While marketing in the wet market this morning, I bought some very fresh crab when the idea of cooking Claypot Crab Rice came into my mind. Hence, I went online and goggled for some recipes idea. My recipe for the Claypot Crab Rice tonight are actually adapted from 2 different recipes found online : elinluv’s tidbits corner – Homecooked Clay Pot Crab Rice and Dining Recipe – Crab Rice in Clay Pot (紅蟳米糕)

Ingredients:

  • 2 medium size flower crab – washed and cut into halves

  

  • 3 tablespoon of chinese cooking wine
  • 3 tablespoon of ginger juice
  • 1 tablespoon of light soy sauce
  • dash of pepper
  • 2 cups of rice – washed
  • enough water to cook the rice
  • 3 pips of garlic finely chopped
  • 3 shallots sliced thinly
  • 2 tablespoon of dried shrimp finely chopped
  • 3 pieces of dried mushroom – soaked in water and diced
  • 2 tablespoon of olive oil
  • 2 tablespoon of butter
  • pinch of salt
  • scallions for garnishing

 

Method:

  1. Marinate the flower crab with the chinese cooking wine, ginger juice, light soy sauce and pepper for 1 hour in the fridge
  2. Heat the olive oil in the claypot. Fry the garlic, dried shrimp and shallots and mushroom until fragrant
  3. Add in the washed rice and mix well
  4. Add in the butter and fry until the butter has melted and incorporated into the rice
  5. Add enough water to cook the rice and bring to boil 
  6. Lower the heat to low heat and cover the lid to cook for 15 minutes
  7. Add the crabs on top of the half cooked rice 
  8. Cover the lid again and cook until the rice and crab are cooked thoroughly. This should take between 20 to 25 minutes
  9. Serve hot with garnished scallions

Note : This recipe yields enough for 4 person (small eater)
