Fried Sarawak Kolok Noodles served with Char Siu

I had packets of Kolok Noodles from Sarawak that I purchased during one of my trip home. Unfortunately, the noodles were just noodles and there were no sachets of oil and seasoning that comes with it. So I had to use the noodles in other form of cooking instead. So tonight, I decided to Fried Sarawak Kolok Noodles served with the home made char siu, recipe available here. A simple dish that my family loves! What more can a mother ask for….

Ingredients:

  • 4 nos of dried sarawak kolok noodles
  • 1 carrot, julienne thinly
  • 1 nos of yellow onions, half and sliced thinly
  • 5 tablespoon of light soy sauce
  • 1 tablespoon of dark soy sauce
  • 3 tablespoon of Olive Oil
  • Pepper to taste
  • some lettuce, julienne thinly

Method:

  1. In a pot of boiling water, cook the noodles till it is cook (according to the instruction)
  2. Blanch the noodles in the cold water. Drained and set aside
  3. In a small bowl, mix the light soy sauce and dark soy sauce together
  4. In the wok, heat up the oil. Add in the onion and saute for 2 minutes
  5. Add in the carrot and saute together with the onion till soft
  6. Stir in the noodles and mix well
  7. Add in the soy sauce mixture (step 3) and stir till well mix
  8. Season accordingly with pepper
  9. Stir in the wok till the noodles are well mix and any sauce is dried up slightly
  10. Dish up and serve with lettuce and the char siu
