Ayam Masak Merah Madu (Malay Style Honey Chicken)

Living in a multi-racial country has lots of privileges. The unity between the difference race and religion foster a closer ties between the people while giving them opportunities to learn, understand and respect each other’s culture and religion.

While my little ones are very fond of Indian cuisine, I personally loved the Malay cuisine. The herbs and spices they used in their cooking are simply delicious. One of my favourite dish is “Ayam Masak Madu” translated into English is known as Honey Chicken, Malay Style. The recipe I shared today is adapted from linapg.blogspot.com – Ayam Masak Merah Madu

Ingredients:

  • 500gm of chicken thighs – cut into small pieces
  • 1 nos yellow onion
  • 5 nos red onion
  • 3 cloves of garlic
  • 1cm of ginger
  • 1 tbsp of chili paste
  • 3 tbsp of tomato paste
  • 1 tsp of brown sugar
  • 3 tbsp of honey
  • a pinch of salt
  • a pinch of pepper
  • 1 tablespoon of turmeric
  • 4 tbsp of Olive Oil
  • 1 cup of water
  • Coriander for garnishing

Method:

  1. Clean and pat dry the chicken. Marinate with salt, pepper and turmeric for 2 hours
  2. Blend yellow onion, red onion, garlic, ginger, tomatoes and chili paste together
  3. Deep fry the chicken until cook. Drained and set aside 
  4. In the wok, heat the olive oil
  5. Add in the paste (blended in No.2 above) and stir-fry until fragrant
  6. Add in the honey and brown sugar and stir
  7. Add in the water and bring to boil. Lower the heat
  8. Season accordingly with salt to taste (note that your chicken has been marinated so the chicken would be flavorful as well)
  9. Add in the chicken into the sauce and stir until well coated
  10. Dish up and garnish with coriander. Serve hot with rice
