Butter Cheese Cupcakes

School Holidays is here…. What kinda of activities do I have to come up with to occupied my 11 years old monster…. Baking is a fun kids activities… So I decided to bake some Butter Cheese Cupcakes with them.

Ingredients:

  • 250 gm butter – softened in room temperature
  • 4 size AA eggs – separate egg white and egg yolk in separate bowls
  • 50 gm + 140 gm caster sugar
  • 200 gm self-raising flour
  • 1 teaspoon baking powder
  • 50 gm + 15 gm grated cheddar cheese
  • 2 vanilla pods – scrap the vanilla beans
  • 60 ml buttermilk

Method:

  1. Line 24 cupcake tins with cupcake cups
  2. In the mixing bowl, beat egg white until slightly firm
  3. Add the 50 gm caster sugar and beat until it is firm. Set aside
  4. Beat the butter and sugar until light and fluffy
  5. Add in the vanilla beans scrap from the pods and beat until well mixed
  6. Add in the egg yoke one at a time while beating it well each time
  7. Add in half of the self-raising flour (make sure that it is sifted). Beat until well incorporated
  8. Add half of the buttermilk and beat until well incorporated. Repeat with the balance buttermilk
  9. Add in the 50 gm of cheddar cheese and mix well
  10. Add in the remaining self-raising flour and beat until well incorporated
  11. Beat in half of the egg-white mixture (meringue) that you had prepared in point 2-3 above
  12. Remove the bowl from the cake mixer. Fold in the remaining egg-white mixture until well mixed
  13. Filled each cupcake cup up to 3/4 full
  14. Sprinkle with the remaining cheddar cheese
  15. Baked in pre-heated oven at 150c for 40 minutes
