Korean Cooking: Korean-Style BBQ Pork Ribs (Dwaeji Galbi)

I have been following Korean Bapsang blog for a while. I love and have tried some of the recipe this lovely Korean-American lady shares on her blog.

Recently, I saw her post on Facebook where she shared her July 4th weekend recipe where she made dwaeji galbi aka pork ribs which is another Korean favourite BBQ dish. As I personally loved baby back ribs. The discovery of good quality baby back ribs from one of the local butcher just round the corner from my house recently got me excited and looking for the excuse to try out the recipe. So, using my son’s birthday celebration, I just had the perfect excuse to cook for the family and extended family. The result… fingers licking good dwaeji galbi that everyone loves! So here, sharing my adapted recipe:

Ingredients:

  • 2 whole slabs ( 5 – 7 pounds) baby back ribs
  • 1/2 cup soy sauce
  • 2/3 cup water
  • 1/4 cup mirin
  • 2 tablespoons sesame oil
  • 4 tablespoons honey
  • 3 tablespoons dark brown sugar
  • 4 tablespoons minced garlic
  • 2 tablespoon grated ginger
  • 1 medium red onions, minced finely
  • 1/2 teaspoon black pepper

Method:

  1. Prepare the marinate ingredients and mix well
  2. Rinse the ribs and pat dry
  3. Coat the ribs well with marinate. Marinate for at least 6 hours (best if marinate overnight)
  4. Pre-heat the over to 160c
  5. Line the baking tray with aluminium foil. Arrange the ribs with the meat side down on the baking tray
  6. Cover the baking tray tightly with aluminium foil
  7. Bake for 1.5 hours
  8. Remove the foil cover
  9. Increase the temperature to 200c and change the oven to grill. Grill the ribs on each side for 5 minutes or until the ribs are lightly charred
  10. Baste the ribs with sauce while grilling
  11. Serve accordingly
