Chinese Cuisine: Soya Sauce Braised Chicken with Mushroom

Suddenly remembered that I have Thermos Cooker that have been sitting in the cupboard for years. Can’t even remember the last time I used it. 

As the saying goes: kill 2 birds with 1 stone. So taking advantage of the equipment that I have, decided to prepare my lunch and family dinner together. Braised Soya Sauce Chicken with Mushroom using thermos cooker is so easy and stress free. Only takes 30 mins to prepare and then popping into the thermos cooking and let it continue cooking. And I can go to bed with a peace of mind 😉 what more can I asked for, right?


  • 500gm chicken cut into big pieces
  • 30gm / 10 pieces of mushroom – soaked until soften
  • 2 nos cinnamon stick
  • 3 cloves of anis star
  • 3 cups of water
  • 1 cup of light soya sauce
  • 2 tablespoons of dark soya sauce
  • 2 inches of ginger – sliced
  • 3 cloves of garlic – crushed lightly
  • 3 tablespoon of sugar
  • 4 hardboiled eggs – shelled


  1. Using the inner pot, put in the anis star and cinnamon stick
  2. Add the water, light soya sauce and dark soya sauce. Bring to boil
  3. Add in the sugar and bring back to boil. Add another teaspoon of sugar if you prefer it sweeter 
  4. Add in the chicken pieces and ensuring that the boiling sauce covers the chicken
  5. Add in the mushroom and eggs
  6. Bring to boil and then lower to medium fire
  7. Boil for about 10 mins
  8. Cover and placed into the thermos cooker. Let it cook for at least 2 hours
