East Meet West: Oven Roast Pork Roll served with Fried ‘Mee Kolok’

Weekend are the only days where I could spend quality time and sit down for a good dinner with my love ones. Unfortunately, lately, fatigue is not allowing me to spend as much time as I wished in the kitchen to whip up interesting meal for them.

So this week, I decided to try just pop the meat into the trusty old oven instead of slaving away on the stove. And quick whip of the noodles and dinner is ready! Easy, time saving and a delicious meal that the boys love… What a happy mother I am to see the joy on their face as they savor their dinner!

Ingredients:

Pork Roll

  • 500 gm – 4 pork roll
  • 2 nos of carrot – peeled and cut into chunks
  • 2 stalk of celery – cut into chunks
  • 1 tablespoon of olive oil
  • Italian herbs
  • Salt
  • Pepper

Noodles

  • 4 nos Sarawak Kolok Mee (dried and pre-pack) – You may change the noodle to your preferred noodle 
  • 1 yellow onion – cut into slices
  • 2 tablespoon of dried prawns
  • 3 tablespoon of light soy sauce
  • 1 tablespoon of dark soy sauce
  • Pepper to taste

Method:

  1. Wash and pat dry the pork
  2. In a bowl, mix the cut vegetables with the olive oil and Italian herbs
  3. In the baking dish, spread the vegetable evenly
  4. Season the pork with salt and pepper on both side
  5. Place it on top of the vegetable in the baking dish
  6. Heat up the oven at 180c
  7. Bake in the oven for 30 minutes
  8. Turn the pork and bake for another 15 minutes
  9. Boil the Sarawak Kolok Mee according to the instruction on the packet. If you have chosen another type of noodles, cook it according to the instruction
  10. Heat up the wok with 2 tablespoon of oil
  11. Saute the onions and dried prawns until fragrant
  12. Add in the drained noodles and fry for a while
  13. Add in the soy sauce (both dark and light)
  14. Season according with pepper
  15. Stir till well mix
  16. Serve with the roast pork hot
