Zucchini with cayenne chicken 

Don’t you ❤️ it when you just simple whip up a dish based on what’s available in the fridge and your family ❤️ it?

With the Lunar New Year celebration on-going, I forgot to do my groceries shopping just before the market closes for the week. So when it comes to cooking for the family, one could only use what’s available 😉


  • 450gm chicken strips – cut into small cubes
  • 1 tablespoon cayenne powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon coarsely ground black pepper 
  • 1 zucchini – cut into small pieces
  • 1 nos yellow onions – cut into large pieces


  1. Marinate the chicken with cayenne powder and salt for at least 1 hour
  2. Heat up 2 tablespoon of olive oil 
  3. Sauté the onions 
  4. Add in the chicken and stir fry for about 3 minutes
  5. Add 2 tablespoon of water
  6. Cover to cook for 5 minutes
  7. Uncover and stir fry for another minute
  8. Add in the zucchini and stir fry for 1 minute
  9. Cover and cook for another 5 minutes
  10. Season with coarse black pepper
  11. Adjust the taste with salt if needed
  12. Serve not

Note: I serve it with XO fried rice for dinner
