Japanese Cuisine : Scallop Rice

The weekend is finally here. Addicted to the latest C-Novel that I am reading (it is over 1,800 chapters), I find the quickest way to cook a yummy meal for my family.

So, for tonight, it is a simple scallop rice cooked in the rice cooker. And it turns out well as it was to the liking of the fussy little eater that I have at home. 

Ingredients

  • 100gm scallops – soak till soft
  • 2 tablespoon sake
  • 1 teaspoon sugar
  • 1 tablespoon mirin
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 2.5 cups of Caltrose rice
  • 1.5 cup of water
  • 1/2 carrot – julienne thinly
  • 100 gm mushroom

Method

  1. In a bowl, marinate the scallops with sake, sugar, mirin, soy sauce & salt for at least 1 hour
  2. Wash the rice and place them in the rice cooker
  3. Add in the carrot, mushroom and marinated scallops with its sauce
  4. Add in the water
  5. Stir lightly
  6. Switch on the rice cooker and let it cook
  7. Serve hot
