Healthy Cooking: Italian herbs chicken with mushroom

While shopping the other day, came across some fresh herbs in the supermarket. So decided to make my own Italian herb salad 🥗 dressing. And I had that for lunch with my fav rocket salad and cheese. My colleague whom tried it, casually commented that if I were to use the same dressing for chicken marinate, the chicken would taste fantastic!

So that inspired me to once again, make the same dressing but using it as marinate instead. As a result, I fell in love ❤️ with he tanginess and flavourful chicken cooked with mushroom 🍄 


  • 1 boneless chicken thigh
  • 1 packet of oyster mushroom – sliced
  • Salt and pepper to taste

Italian Dressing

  • 1 lemon 🍋 – juiced
  • 1/2 cup olive oil 
  • 5 stalks of thyme 
  • 3 stalks of rosemary 
  • A pinch of salt
  • 1/2 tablespoon of kaffir lime powder 


  1. Mince the thyme and rosemary finely
  2. Mix the Italian dressing until well blended
  3. Add in the chicken and marinate overnight
  4. Heat up the wok with 2 tablespoon of olive oil
  5. Pan fry the chicken – 5 minutes on each side till well cooked
  6. Set aside
  7. In the same wok fry the mushroom 🍄 
  8. Season with a pinch of salt and pepper
  9. Cut the chicken into bite size
  10. Add it back into the wok and stir fry for another 3 minutes with the mushroom. Here you may add a little bit of the marinate (about 2 tablespoon) if too dry
  11. Dished up and serve hot. You may garnish with fresh thyme as desired 😍
