Kaffir Fried Chicken 

My youngest is so into fried chicken lately…. 😱 and so this mother uses the opportunity to experiment with different type of chicken flavouring 😉 so for tonight’s dinner, decided to use kaffir lime powder to marinate the chicken. Surprisingly, it turns out super yummy 😍 so… a happy boy makes a happy mother 😍🤣

Ingredients:

Chicken marinate

  • 500gm chicken – cut into big pieces
  • 1 tablespoon kaffir lime powder
  • 1 tablespoon salt
  • 1 tablespoon coarse pepper 

For frying the chicken

  • 1 big red onion – slice into thin strips
  • 30gm curry leaves
  • 4 red chilies – cut into small pieces
  • 250gm flour
  • 1 tablespoon salt
  • 1 tablespoon coarse pepper
  • 1 tablespoon kaffir lime powder
  • 1/2 tablespoon cayenne chili powder

Method

  1. Marinate the chicken for at least 3 hours
  2. In the bowl, mix the flour, salt, pepper, kaffir lime powder and cayenne chili powder together
  3. Heat up the oil for frying
  4. Coat the chicken with the flour mixture
  5. Fried in the oil for 3 minutes
  6. Add in the curry leaves, onions and chili. Fried for another 5 minutes
  7. Drain from oil. Rest for 10 minutes
  8. Fried for another 3 minutes in the hot oil
  9. Serve hot
