Quinoa Oats Cookies 

Recently I was having a chat with a very good friend of mine when she commented that her girls are very fussy when it comes to eating. They loved muesli bars but don’t like it too sweet. So with that in mind, I attempted to make my own healthy snacks at home for them. So I experimented it with Quinoa. Surprisingly, it turns out better than I had imagined 😍

Ingredients

  • 200gm cooked quinoa
  • 100gm grapeseeds oil
  • 1 egg
  • 90gm flour
  • 1 teaspoon baking powder
  • 130gm Oats
  • 90gm brown sugar
  • 80gm almond nibs
  • 30gm chia seeds
  • 10gm white sesame
  • 10gm black sesame
  • 80gm raisins
  • 1/2 salt
  • 80gm chocolate chips

Method

  1. In the bowl, mix all the dried items together minus quinoa
  2. Add in the quinoa and mix well
  3. Add in the oil and lightly beaten egg
  4. Mix well
  5. Shape into desired shape
  6. Baked in pre-heated oven at 180c for 15 – 20 minutes until it is light brown
  7. Cool before storing
