A shepherd’s pie is basically a casserole with a layer of meat with vegetables, topped with mashed potatoes. It is then baked until well browned.
Originated from U.K, it is most commonly made from lamb.
I recently had Shepherd Pie over lunch while doing 1 to 1 training with my colleague whom were in town 😉. The pie was so awesome, so I decided to make something similar for dinner tonight taking advantage also in using the saffron that a good friend of mine brought it back from her recent holiday.
Instead of using mince meat, I decided to use small beef chunk for the meaty texture. And I top it with mashed potatoes and a layer of Parmesan cheese just before popping it into the oven. A perfect combination of the potatoes and cheese top that was crispy 😍 and what’s make this mother a happy mum…. my little one (no longer so little now that he is already 12 this year), he had 2 big helpings 😉😍
Ingredients
- 800gm beef chunk
- 6 potatoes 🥔 (about 500gm)
- 1 carrot 🥕 – cut into cubes
- 1 yellow onion – cut into cubes
- 1 bowl of sweet corns
- 200gm Parmesan cheese
- 3 tablespoon of Worcestershire sauce
- 100gm butter – cut into 2 portion
- 100ml beef stock
- A pinch of saffron
Method
- In the pot, boil the potatoes for 20 minutes until cooked
- Mashed the potatoes with 50gm butter until well blended. Set aside
- Heat up the 50gm butter
- Sauté the onions until soft
- Add the carrot and sweet corn. Stir fry for 5 minutes
- Add the beef and stir fry for 3 minutes
- Add in the saffron and fry for 1 minute
- Season with salt and pepper
- Add in the Worcestershire sauce and stock. Stir well
- Bring to boil and off the fire
- Pre-heat oven to 205c
- Transfer to casserole. Even the meat out well
- Top with the mash potatoes ensuring that the whole casserole is covered evenly. Lightly rough up the potatoes
- Sprinkle the Parmesan cheese on top evenly
- Baked for 20 minutes
- Increase temperature to 250c and bake for another 10 minutes until the top is browned
- Served hot
I turned my dinner into a East meet West dinner, serving it with my eldest’s favourite, Japchae (Korean dish) 😍🤣
