Peanut Butter Cookies 🍪

My ‘picky eater’ is requesting for home bake cookies. So mummy had to find time to fulfill the request. At a stage, he was so into peanut butter so we had gotten a jar of peanut butter that was subsequently left untouched. So, I decided to use the peanut butter for bake Peanut Butter Cookies. A mother’s delight is when the cookies turn out well and to my ‘picky eater’ taste. He loves it so much that he had 3 big pieces in 1 helping. Yeah! A happy child is a happy mother! So the happy mother is sharing the recipe here after the request of some friends after I posted the photo of the cookies on my social media.

Ingredients:

  • 250 gm butter
  • 200 gm brown sugar
  • 2 eggs
  • 1 teaspoon vanilla paste
  • 200 gm peanut butter (chunky)
  • 100 gm corn flour
  • 240 gm self-raising / medium protein flour
  • ½ bowl caster sugar (for the coating of the dough)

Method:

  1. Cream butter and brown sugar until light and fluffy
  2. Beat in the egg slowly until well mix
  3. Add in the vanilla paste and mix well
  4. Add in the peanut butter and mix well
  5. Beat in the remaining egg until well mix
  6. Add in half of the flour + corn flour and beat until well mix
  7. Slowly fold in the remaining flour + corn flour and mix until a soft cookie dough is form
  8. Refrigerate for 1 hour
  9. Using teaspoon, ½ teaspoon each of the dough, roll into ball
  10. Coat the cookie ball with the caster sugar
  11. Lightly shape it with a fork
  12. Bake in 180c for 12 – 15 minutes until the cookies are lightly brown
  13. Cool and store in air-tight container
